Madeira cake recipe





Ingredients

*Three quarter cup unsalted butter, room temperature.
*Three quarter cup superfine sugar
*Three large eggs, room temperature
*One and half cups sifted self – rising flour
*Half cup sifted all purpose flour
*One tbsp lemon juice
*Two tsp lemon zest
*Two teaspoon vanilla

How to Make:

  1. Pre heat the oven to 350F. Pre heat an 8” inch spring form or 8”- inch square pan; set aside.
  2. Using an electric mixer cream the butter and the sugar until mixture is light and fluffy. Add the eggs one at a time.  It is a good idea to break each egg into a small bowl or cup and beat it lightly with a fork before adding it the creamed mixture. Beat well after each addition.Do not add the eggs to quickly.Then follow by a spoon of the self-rising flour, and beat thoroughly.
  3. Sift the remaining flour together.Fold gently into the batter using a rubber spatula.Try to retain as much volume as possible. Fold in the lemon juice, the zest and the vanilla.
  4. Turn the mixture into the prepared pans, smoothing the top. Bake about 45 to 50 minutes, until cake shrinks slightly from sides of pan. Let the cake cool in the pan for five to ten minutes.  Sprinkle wax of parchment paper liberally with sugar. Turn the cake out on the paper, remove the lining paper and let cake cool completely.
